Lovin’ From The Oven

When life Gives You Lemons…

There are a lot of closet cooks and bakers out there, and it seems a whole bunch of them are friends of mine. I am forever tasting delicious things the people in my life have whipped up and carefully crafted and it is best of all when they are kind enough to share their recipes with me. My talented friend Lauren recently donned the table with these delectable wee muffins at a friend’s birthday tea party and I was in awe, and I am now paying it forward to you.

What you need…

  • 2 cups self raising flour
  • 3/4 cup sugar
  • 75g butter
  • 1 cup milk
  • 1 egg
  • Grated rind of a large lemon (I used two smaller ones today)
  • 1/4 cup of lemon juice
  • 1/4 cup sugar

How to make…

Preheat oven to 180 degrees Celsius. Mix flour and first measure of sugar in a large bowl. In another bowl melt butter, and then add milk, egg, and lemon rind and beat until combined. Add liquids to dry ingredients, mix until just combined. Bake for 10-15min or until the tops start to brown and a knife when inserted comes out clean.

While they’re baking away, stir lemon juice and sugar together and pour oven the muffins when they are hot from the oven. Serve warm or cooled.
