Ingredients
1 can chickpeas, drained
1 large kumara
2 cups broccoli
1 cup carrots
1 cup cauliflower
1⁄2 cup mushrooms
1⁄4 cup pistachios
1 large clove garlic
1 onion
2t ground cumin
2t ground
1t salt
3T olive oil
1. Chop the kumara into chunks and boil until soft, then drain and mash (or blend in the processor). Place in a mixing bowl.
2. Preheat oven to 200°C.
3. Finely chop (or blend) vegetables, onion and garlic and add to the bowl.
4. Roughly chop (or blend) the pistachios and add to the bowl.
5. Chop and mash (or blend) the chickpeas till they have as few lumps as possible and add to the bowl.
6. Add remaining ingredients and mix thoroughly.
7. Roll mixture into small balls and place on oven trays lined with baking paper (this mixture should make a few trays worth).
8. Press down each ball with a fork to flatten (this makes them cook slightly faster).
9. Bake for 20 minutes (or until golden brown on top) then flip each patty over and bake for another 20 minutes. Best served with sauces and salad.
